Calling all potato cake recipes ...



My friend George, from Monday night jam session is wanting us all to post our potato cake recipes so we can all try it different ways.
So ...
I'm enlisting everyone's help. Please post your recipe and let's see what we come up with.
I'll post mine in the comments section as well in just a little bit.

I'll be back for those recipes. I did not grow up with potatoe cakes, as I am Puerto Rican I have other things that are much more traditional and available in our tables, but once I tasted them I loved them. Will be looking forward to learning how to make them.

I don't think I've ever had a potato cake (or is it potato pancake), other than the "potato cakes" they serve at Arby's. If anyone is planning to make some potato cakes, be sure to let me know so that I can come on over and try some!
